Because of the pandemic brought about by the Covid-19, many people around the world stay at home, either to work or to stay safe from this deadly disease. The long hours spend within the confines of one's home are good in the short period, but as time goes by, it becomes boring.
Moms and grandmas, dads and granddads, and others find a way to beat the boredom and monotony of the situation. Many become gardeners or in Filipino lingo = "plantitas and plantitos". Some become bakers, chefs, cooks, or "kusineras and kusineras". Your Mamay P belongs to the latter. To prove, here is my authentic Pinoy-style chicken caldereta that is cooked in less than an hour.
Authentic Pinoy-Style Chicken Calderata
Ingredients:
1/2 chicken, cut into 10-12 pieces
5-6 cloves garlic
1 medium-sized onion
1 big potato
2 small-sized carrots
1/2 cup green peas
1 1/2 cups water
1/2 packet caldereta mix
1 tbsp oil
ground black pepper and salt to taste
Procedure
1. Heat oil in a pan.
2. Saute garlic and onion.
3. Pour in chicken pieces and cook in oil for 3 minutes.
4. Add 1 cup of water, potato and carrots, cover and cook for 10 minutes.
5. Mix 1/2 packet of caldereta mix with 1/2 cup water, pour in, and continue cooking for 5 minutes.
6. Add 1/2 cup green peas.
7. Dissolve 1 1/2 tbs. corn flour in 1 tbs. water and pour in to thicken the sauce.
8. Sprinkle ground pepper and salt to taste.
9. Turn off the heat once the sauce thickens.
10. Serve with hot rice.
